    It is a very basic basic dough but with very specific procedures I have done it several times the first time I was crying because they did not come out it was a disaster but in the end if it was possible in my country the biggest problem is to find buttermilk then we put white vinegar on milk giving a very good result … for each cup of milk three tablespoons of vinegar … greetings.

    I have never understood the butter grating. No one in the olden days did it and they had wonderful biscuits. Its a lot of unnecessary work not to mention a bunch of it stuck to the parchment paper when she tried to add it to her flour. Save yourself the trouble and just use the old fashioned pastry cutter.

    Anybody else taught to make biscuits with Crisco? Also, I was never taught any measurments. I was just taught self-rising flour, an unholy amount of Crisco, and then buttermilk. Anybody else or is my family just weird?

    King Arthur’s self rising flour is also a low protein soft winter wheat flour, very close to White Lily, and easier to find and order if White Lily is not available locally. The flour is the real secret to tender southern biscuits. I second baking in cast iron, and if you bake them close together they’ll rise higher.

    Just goes to show you baking is more art than science. Another video on biscuits says you want a flour with more gluten, not less gluten. Yet another video says you never want to roll this, just a gentle press. I just throw my biscuits into the oven and pray. Sometimes my prayers are answered.

    I made these thus morning. I grabbed the heavy cream out instead of the buttermilk only realizing my mistake after the biscuits were baking. But they turned out very good
